The family farm, which overlooks the Atlantic Ocean, grows heritage barley used in the whiskey-making process. The distillery is located in the town of Clonakilty, West Cork, on the Wild Atlantic Way - a region known for its stunning landscapes and rich agricultural traditions.
The distillery places a strong emphasis on sustainability, using 100% renewable energy and implementing environmentally friendly practices throughout its operations. The family’s farm not only provides barley for the whiskey but also supports biodiversity and conservation efforts.
The distillery cultivates heritage barley on coastal land, drawing pure spring water from ancient rock formations. Using both malted and unmalted barley, they extend fermentation to enhance flavor and triple-distill the whiskey for a lighter spirit. Water is added gradually through a 'gentle cut'. The whiskey matures in oak casks exposed to Atlantic air, even if it means a higher angel's share.
Clonakilty Single Pot Still begins with 100% Cork-grown barley, triple distilled in copper pot stills at Clonakilty Distillery. It matures in ex-Bourbon and Amontillado casks at their Atlantic Ocean warehouse. The whiskey presents flavours of sweet vanilla and kiwi, complemented by notes of caramelised pear and dark chocolate.

Nose - Vanilla sweetness leads to hints of demerara sugar, citrus peel and kiwi.
Taste - Vanilla, caramelised pear and apple, gives way to a gentle wood spice, dark chocolate and orange.

Tasting Rating Guide
1: Light, good for beginners - an aperitif on a summers day, i.e. Glengoyne, Auchentoshan
2: Also good for beginners but with more depth and body - a little stronger than 1, ie. Glenmorangie, Speyburn
3: A dram for everyone, a little more complex so the palate requires a little more experience, i.e. Cragganmore, Macallan
4: A stronger spirit, a big whisky with lots of character and body, excellent after dinner, i.e. Lagavulin, Laphroaig
