Upon opening, Pickering's became the first exclusive gin distillery to establish itself in Edinburgh in over 150 years.
The family had kept the original recipe a secret for over 66 years until it resurfaced during the distilling process at Summerhall. Originally a gin full of fragrant spices and fresh citrus fruits, it became clear that, by 2013, people were expecting a softer, smoother style of gin. So, he founders engineered a bain-marie heating system for their 500 litre copper stills. This is the secret to the balance of Pickering's. After carefully preparing and measuring the botanicals, they add them to the grain spirit in the stills. Here they enjoy a slow luxurious simmer, which coaxes out their subtle, soft, highly drinkable flavours.
To make Pickering’s Sloe Gin, the team tailored the botanicals in the award-winning Pickering’s Gin to produce the perfect base for ripe, plump sloe berries.
They've enhanced their classic nine botanical blend with bold additions of cardamom, clove, anise, and fennel. This enhances the natural warmth of the sloe berries. For a decadent finish, they've added sweet cinnamon. This balances the rich red fruit flavour of their carefully selected sloes into a wonderfully warming sip.
