The Mossburn Cask Collaboration Series is testament to enduring friendships. Bringing together the knowledge, craft, and experience of two producers from different categories, in a meeting of inquisitive minds and iconic spirits. This second release in the series is a collaboration with the Dupont family, renowned Calvados producers in Normandy’s Pays d’Auge since 1887.
For this expression, the team at Mossburn selected single malts from four Speyside distilleries. They aged them for 12 years in refill American oak hogsheads. They then married the whiskies and re-aged them in French oak barrels that once held Calvados and Pommeau, both emblematic of Normandy. The Master
Blender chose these malts for their spicy florality and nuttiness. Allowing them to develop additional layers of baked apple and oaky spice from the Calvados casks.
The resulting whisky offers a well-rounded complexity, with notes of red apple, ginger, nut brittle, and a gentle spicy finish. This limited edition was drawn from 18 carefully selected casks of varying sizes, ranging from 230 to 470 litres. Bottled at cask strength (57.2% ABV), it remains unfiltered and free from added colouring. A reflection of Mossburn’s commitment to authenticity and intrigue.
Official Tasting Notes
The nose carries an immediate honied florality with baked red apples coming through. A touch of vanilla cream, pink peppercorn and some oaky spice sitting in the background.
Light, well rounded and initially delicate on the palate, more weight, length, and a touch of fire kicking in later. The casks have added a subtle undertone of apple sweetness. This marries well with the heathery cereal notes of the whisky, matching the light ginger and spice coming from the oak.
Finishes with complexity and some apple crumble notes of toasted hazelnuts, sultanas and toffee brittle.
