Filey Bay Single Malt Whisky is made at the Spirit of Yorkshire Distillery, situated at Hunmanby between Scarborough and Bridlington, not far from Filey. Launched in 2016, the distillery is a collaboration between farmer and brewer, David Thompson and Tom Mellor. Having been friends for several decades, the duo shared a dream of creating a Yorkshire whisky. But one that doesn’t just replicate Scotch.
With the help of renowned whisky expert Dr Jim Swan, David and Tom debuted Yorkshire's first ever single malt whisky - Filey Bay. Inspired by the bay that is in sight of the distillery, Filey Bay is an exciting addition to
English whisky. A true field to glass distillery, they use barley grown at their farm and distills their spirit on both copper pot and column stills.
For this Filey Bay release, the distillers matured the light and fruity Yorkshire spirit in ex-Moscatel Sherry Hogsheads. A combination of elegant Spanish sweetness with spirited Yorkshire character!
Pedro Ximénez and Oloroso sherries are common in single malt whisky maturation, but Moscatel is a much rarer find. Known for floral aromas, Moscatel grapes thrive in sandy soil. The vineyards are close to the beaches in the sherry region of Spain – a perfect match for the Filey Bay whisky, made on the Yorkshire Coast.
