Kilchoman Distillery is located on the Isle of
Islay, off the west coast of Scotland. Established in 2005 by Anthony Wills, Kilchoman is one of the smallest distilleries on the island. They operate as a farm distillery, meaning that they grow a portion of their barley on-site, making them one of the few distilleries in Scotland to do so. This allows them to have greater control over the entire whisky-making process, from barley cultivation to bottling.
Known for their peated whiskies, the distillery crafts their whisky using locally sourced barley and traditional floor malting techniques. Their whiskies often give a bold, smoky character, like most Islay drams, along with layers of complexity and depth.
The 100% Islay Sherry Cask Matured was distilled from Kilchoman's 2011, 2012 and 2013 barley harvests. Matured for a minimum of 11 years in 16 ex-Oloroso Sherry Butts. During maturation, layers of dried fruits and rice spices have infused into the whisky which balance beautifully with the natural citrus sweetness and peat smoke of Kilchoman.
