Established in 2010, Edinburgh
Gin was founded by Jane and Alex Nichol, who had previously worked in the whisky industry. They were originally operating as part of the Spencerfield Spirit Company, until the company was acquired by Ian Macleod Distillers in 2016. The distillery has been based on East Market Street since 2024, with all distillation taking place in the city.
They are renowned for their diverse range of gins. These include classic London Dry-style varieties, as well as inventive flavoured expressions such as rhubarb and ginger or elderflower. All their products use 100% natural flavours.
Edinburgh Gin Classic is a distillation of the legendary city, with Edinburgh present in every sip. Heady notes of pine buds and lavender that grow in the lush, green parks, the darkness of the mulberries that echo the city's gothic surroundings and the effervescence of citrus fruits, once exported from warmer climates through the city’s bustling docks.
Signature Botanicals
Orange Peel - Classic citrus notes to balance with the juniper for a classic dry gin flavour.
Mulberries - Adds juicy sweetness and smoothness to aftertaste.
Pine Buds - Fresh wooden notes added to aroma. Vapour infused to extract only lightest flavours.
Lavender - A classic floral note, with distinct aromas that complement the pine notes.
Lemongrass - More herbal and aromatic than lemon peel with less of the sharp, acidic flavour.
Official Tasting Notes
Nose - Clean and fresh with spiced notes.
Palate - Rounded juniper, pine, floral lavender, with hints of soft spice and aromatic citrus.
Finish - Finally, bright citrus give away to a round, smooth finish.
