Kingsbarns Distillery, located in Fife in the Scottish Lowlands near St Andrews, is owned and operated by the Wemyss family, with ties to the whisky industry dating back to the turn of the 19th Century. In 2008, they devised plans to transform a charming Georgian, semi-derelict farmstead into a distillery. This became Kingsbarns Distillery opening in 2014. They have 2 stills and can produce around 600,000 litres a year. They source all their Barley from Fife, and source their own mineral-rich water from an aquifer 100 metres directly below the distillery.
Kingsbarns Doocot is full of sweet, fruity character. It's light, intensely fruity, floral and complemented by a rich colour. This comes from the high quality bourbon casks it has matured in.
Inspiration for the name of this new Single Malt came from the heart of the distillery at Kingsbarns. During the renovations of the old farmstead that commenced in 2013, the focus was on restoring rather than replacing many parts of the historic building. One of these was its oldest space - The Doocot.
Scottish for Dovecot, the Doocot sits at the centre of the Fife distillery and holds their first fill cask from March 2015. A space that once acted as home for doves and pigeons, it's now transitioned to a home for this story. However its history still very much intact.
Master Blender Isabella Wemyss has carefully selected a combination of Ex-Bourbon and STR (shaved, toasted and re-charred) ex-Portuguese red wine casks to mature this bottling.
Official Tasting Notes
Nose - Sweet and floral, soft brown sugar with banana cake batter and tropical notes.
Palate - Pineapple syrup, summer berries and a hint of rhubarb.
Finish - Kiwi fruit and citrus zest.

Tasting Rating Guide
1: Light, good for beginners - an aperitif on a summers day, i.e. Glengoyne, Auchentoshan
2: Also good for beginners but with more depth and body - a little stronger than 1, ie. Glenmorangie, Speyburn
3: A dram for everyone, a little more complex so the palate requires a little more experience, i.e. Cragganmore, Macallan
4: A stronger spirit, a big whisky with lots of character and body, excellent after dinner, i.e. Lagavulin, Laphroaig
