The distillery places a strong emphasis on sustainability, using 100% renewable energy and implementing environmentally friendly practices throughout its operations. The family’s farm not only provides barley for the whiskey but also supports biodiversity and conservation efforts.
The distillery cultivates heritage barley on coastal land, drawing pure spring water from ancient rock formations. Using both malted and unmalted barley, they extend fermentation to enhance flavor and triple-distill the whiskey for a lighter spirit. Water is added gradually through a 'gentle cut'. The whiskey matures in oak casks exposed to Atlantic air, even if it means a higher angel's share.
Part of the Galley Head range, this release marries Clonakilty Single Pot Still Whiskey with Irish Grain Whiskey, with the distillery crafting the Single Pot Still Whiskey from both malted and unmalted barley. Matured in a combination of ex-Bourbon barrels and ex-Rhum Agricole casks to give sweet tropical flavours.
