Hector Henderson founded the distillery in 1846, and it boasts a lengthy legacy of crafting peated single malt Scotch whisky. While its original construction dates back to the 19th Century, the distillery underwent a complete demolition and reconstruction in 1973. Throughout its history, Caol Ila changed hands multiple times and is currently under the ownership of Diageo, a multinational alcoholic beverage corporation.
Created in 1968 by George Urquhart, the Connoisseurs Choice range has featured more than 2,000 bottlings from almost 100 Scottish distilleries. The label of each Connoisseurs Choice whisky narrates its story, including cask type, bottling date, strength, vintage, and tasting note. Gordon & MacPhail, drawing on four generations of the same family, uniquely crafts these rare single cask and small batch expressions by applying their expertise in matching spirit to oak casks. These creations consistently remain non-chill-filtered.
This bottling of Caol Ila was filled in 2007 and spent its maturation in a refill Sherry Butt. Bottled at 57.1%, this is whisky is a cask strength bottling. A limited release of 404 bottles.
Official Tasting Notes
Apple and lime give way to strawberry jam and cinnamon. Toffee and smoke flavours lead to stewed apples and pepper. A full and spicy finish with citrus and bonfire embers.
