Filey Bay Single Malt Whisky is made at the Spirit of Yorkshire Distillery, situated at Hunmanby between Scarborough and Bridlington, not far from Filey. Launched in 2016, the distillery is a collaboration between farmer and brewer, David Thompson and Tom Mellor. Having been friends for several decades, the duo shared a dream of creating a Yorkshire whisky. But one that doesn’t just replicate Scotch.
With the help of renowned whisky expert Dr Jim Swan, David and Tom debuted Yorkshire's first ever single malt whisky - Filey Bay. Inspired by the bay that is in sight of the distillery, Filey Bay is an exciting addition to
English whisky. A true field to glass distillery, they use barley grown at their farm and distills their spirit on both copper pot and column stills.
This is the fifth annual Filey Bay release for Yorkshire Day. The whisky has been carefully drawn from ex-Cream Sherry Hogsheads by Whisky Director, Joe Clark. Cream Sherry is popular in the UK but often overlooked when it comes to whisky maturation.
Made by blending dry and sweet sherries before maturing in oak, these casks bring something truly intriguing. In this release, they’ve created a whisky full of rich complexity, dried fruits, soft spice and a rounded sweetness.
Official Tasting Notes
Rich and fruity with flavours of apricot jam, fudge, cinder toffee, hazelnuts and orange zest.
