Torabhaig Distillery started distilling in 2017 on the Isle of Skye, in a carefully renovated old farmstead. Torabhaig Distillery started distilling in 2017 on the Isle of Skye, in a carefully renovated old farmstead. As the second licensed distillery on Skye, the project received planning permission in 2002 under its original owner, Sir Iain Noble. Following his death, Mossburn Distillers, a division of Marussia Beverages, acquired the distillery.
Impressively, the roof of the building can be removed to provide access to the stills, allowing for their removal or the addition of more without disturbing the historic structure. The distillery houses two copper pot stills from Forsyths.
The team at Torabhaig have used a mix of concerto and laureate malted barley to create Sound of Sleat. This barley has an in-grain phenols level of 78+ppm and in-glass phenols level of 14.5ppm. Fermented with pinnacle mg+ yeast and aged solely in Quercus Alba American Oak. Bottled at 46% with no chill-filtration or colouring.
Ellis O'Connor, a local artist from the Sleat Peninsula, designed the label and box for this bottling.
Official Tasting Notes
Nose - Notes of delicate orange lead followed by touches of apricot and popcorn lending sweetness to the maritime seaweed that echoes in the glass. Subtle pipe tobacco adds to the elegant smokiness. Rounded out by honey, vanilla and boiled sweets.
Palate - Light and zesty oak spice, joined by the rich and sweet bonfire smokiness that is so unmistakably Torabhaig spirit. Subtly waxy with hints of honey and vanilla balancing sea salt and seaweed. This ebbs away to white pepper and sweet spice.
Finish - Like a sunset over the Sound of Sleat, this is lingering and elegant. Notes of honey, storms and the ocean.

Tasting Rating Guide
1: Light, good for beginners - an aperitif on a summers day, i.e. Glengoyne, Auchentoshan
2: Also good for beginners but with more depth and body - a little stronger than 1, ie. Glenmorangie, Speyburn
3: A dram for everyone, a little more complex so the palate requires a little more experience, i.e. Cragganmore, Macallan
4: A stronger spirit, a big whisky with lots of character and body, excellent after dinner, i.e. Lagavulin, Laphroaig
