Islay, off the west coast of Scotland. Established in 2005 by Anthony Wills, Kilchoman is one of the smallest distilleries on the island. They operate as a farm distillery, meaning that they grow a portion of their barley on-site, making them one of the few distilleries in Scotland to do so. This allows them to have greater control over the entire whisky-making process, from barley cultivation to bottling.
Known for their peated whiskies, the distillery crafts their whisky using locally sourced barley and traditional floor malting techniques. Their whiskies often give a bold, smoky character, like most Islay drams, along with layers of complexity and depth.
This bottling of Kilchoman has been matured in a combination of re-charred Red Wine casks, Oloroso Sherry butts and Bourbon barrels. A few drops of water added after the maturation period has produced a Batch Strength of 57% ABV. The result is a colossal dram combining the natural peat smoke and citrus character of Kilchoman. With flavours of dark fruits, rich spices and salted caramel sweetness.

Nose - Red fruits, fresh cherries, heather blossom, and intense peat smoke.
Palate - Toffee, rich spices, vanilla, and lasting peat smoke.
Finish - Silky viscosity with fresh crumpets, butter and honey.
