When creating the first legal Scotch whisky on the Isle of Raasay, Master Distiller Alasdair Day drew inspiration from traditional Hebridean styles, known for their dark fruit flavours and heather smoke. The resulting single malt combines heritage with contemporary whisky-making techniques.
A fermentation period of 3 to 5 days helps develop the whisky’s distinctive dark fruit character. Meanwhile, the six-cask maturation process allows each cask type to contribute its full range of flavours to the final spirit.
1: Light, good for beginners - an aperitif on a summers day, i.e. Glengoyne, Auchentoshan
2: Also good for beginners but with more depth and body - a little stronger than 1, ie. Glenmorangie, Speyburn
3: A dram for everyone, a little more complex so the palate requires a little more experience, i.e. Cragganmore, Macallan
4: A stronger spirit, a big whisky with lots of character and body, excellent after dinner, i.e. Lagavulin, Laphroaig
