Kilchoman Distillery is located on the Isle of Islay, off the west coast of Scotland. Established in 2005 by Anthony Wills, Kilchoman is one of the smallest distilleries on the island. They operate as a farm distillery, meaning that they grow a portion of their barley on-site, making them one of the few distilleries in Scotland to do so. This allows them to have greater control over the entire whisky-making process, from barley cultivation to bottling.
Known for their peated whiskies, the distillery crafts their whisky using locally sourced barley and traditional floor malting techniques. Their whiskies often give a bold, smoky character, like most Islay drams, along with layers of complexity and depth.
While it is common for distilleries to use Cognac casks to finish their whisky, Kilchoman has taken it a step further! This release has spent its full maturation period in ex-Cognac casks, allowing the French Oak to fully express itself.
They've combined spirit distilled in 2019 with 33 first-first barriques, resulting in a marriage of toasted nuts, warming spices and luscious stone fruit. This balances beautifully with Kilchoman's distinctive peat smoke and bright citrus character.

Nose - Ripe pears and apples, with peat smoke, honey sweetness, toasted nuts and baking spices.
Palate - Buttery mouthfeel, with waves of baked fruit, honeycomb and salty sweetness.
Finish - Drying smoke with a lasting sweetness and mellow fruit notes.

Tasting Rating Guide
1: Light, good for beginners - an aperitif on a summers day, i.e. Glengoyne, Auchentoshan
2: Also good for beginners but with more depth and body - a little stronger than 1, ie. Glenmorangie, Speyburn
3: A dram for everyone, a little more complex so the palate requires a little more experience, i.e. Cragganmore, Macallan
4: A stronger spirit, a big whisky with lots of character and body, excellent after dinner, i.e. Lagavulin, Laphroaig
