Heaven Hill Distillery is one of the few remaining producers of Mellow Corn whiskey. Founded shortly after the end of Prohibition in 1935 and located in Bardstown, Kentucky, Heaven Hill is one of the largest independent, family-owned distilleries in the United States. Established a group of investors, including the Shapira family and still remains family-operated today. The distillery's extensive portfolio includes well-known bourbon brands such as Elijah Craig, Evan Williams and Larceny. They continue to be known for their traditional production methods and significant contributions to the bourbon industry.
Mellow Corn is produced in accordance with a unique set of regulations that define Straight Corn Whiskey. Distilled from a mash of at least 80 percent corn and aged for four years in a once-used Bourbon barrel. Compared to the deep amber colour created by the newly charred oak barrels in Heaven Hill's production of their other Bourbons and American Whiskeys, the result of the used barrel is a lighter, straw-coloured spirit. Bottled at 4 years old, and 100 proof.

Taste - Full-bodied and textured, with a softly spiced sweetness.
Finish - Sweet and chewy like a Barbadian rum.

1: Light, good for beginners - an aperitif on a summers day, i.e. Glengoyne, Auchentoshan
2: Also good for beginners but with more depth and body - a little stronger than 1, ie. Glenmorangie, Speyburn
3: A dram for everyone, a little more complex so the palate requires a little more experience, i.e. Cragganmore, Macallan
4: A stronger spirit, a big whisky with lots of character and body, excellent after dinner, i.e. Lagavulin, Laphroaig
