The distillery places a strong emphasis on sustainability, using 100% renewable energy and implementing environmentally friendly practices throughout its operations. The family’s farm not only provides barley for the whiskey but also supports biodiversity and conservation efforts.
The distillery cultivates heritage barley on coastal land, drawing pure spring water from ancient rock formations. Using both malted and unmalted barley, they extend fermentation to enhance flavor and triple-distill the whiskey for a lighter spirit. Water is added gradually through a 'gentle cut'. The whiskey matures in oak casks exposed to Atlantic air, even if it means a higher angel's share.
Clonakilty Double Oak is a premium bottling of Irish Whiskey, containing Clonakilty distilled Single Pot Still Whiskey married with Single Grain Whiskey.
Matured in ex-Bourbon, Virgin American Oak, and shaved re-toasted European Oak Red Wine barrels. The result is a whiskey with aromas of soft spices and vanilla, leading to flavours of ginger and hazelnut with a long finish of toffee and caramel sweetness and spices lingering on the palate.
