Islay, off the west coast of Scotland. Established in 2005 by Anthony Wills, Kilchoman is one of the smallest distilleries on the island. They operate as a farm distillery, meaning that they grow a portion of their barley on-site, making them one of the few distilleries in Scotland to do so. This allows them to have greater control over the entire whisky-making process, from barley cultivation to bottling.
Known for their peated whiskies, the distillery crafts their whisky using locally sourced barley and traditional floor malting techniques. Their whiskies often give a bold, smoky character, like most Islay drams, along with layers of complexity and depth.
The 100% Islay 15th Edition was distilled from Kilchoman's 2014 and 2015 barley harvests. The spirit then matured in 54 ex-Bourbon barrels for a minimum of 9 years.
The time spent maturing in ex-Bourbon barrels has added layers of caramel, vanilla and butterscotch. These layers balance beautifully with the natural citrus sweetness and peat smoke of the Kilchoman spirit.
Official Tasting Notes
Nose - Vanilla, tropical fruits, fresh hay and toasted oak with grassy notes and salted butter.
Palate - Milk chocolate, salted caramel and fresh peat smoke with candied fruits, lemon, ripe pear and hints of white pepper.
Finish - Lingering maritime peat smoke with fresh fruits and honied sweetness.
