This was the first ever written mention of whisky being made in Scotland. Friar Jon Cor was the Friar of Lindores Abbey, Fife, in the Scottish Lowlands. In 2017, Drew McKenzie Smith decided to bring back whisky making to its original home, by officially opening Lindores Abbey Distillery.
Today, the distillery continues to produce single malt Scotch whisky, carrying on the legacy of the monks who once practiced the craft there centuries ago.
As a fully un-peated malt distillery, for this release Lindores has experimented with peaty flavours, filling their fruit forward new make spirit into a ex-peated cask. This cask first aged Caribbean Rum, then travelled to Islay where it held peated malt whisky. For the past 6 years, it has been maturing the Lindores spirt, resulting in an exceptional single malt whisky, full of interesting aromas and flavours to excite the senses.
A limited release of just 231 bottles, drawn from a unique ex-Rum Peated Cask. Bottled at the cask strength of 59.1% ABV, available exclusively at selected UK stockists.
Official Tasting Notes
Nose - Soft peat smoke, sea breeze, ripe pear and floral heather.
Palate - Toffee apple, muscovado sugar, cinnamon spice. earthy peat, coastal savoury notes.
Finish - Mid-long, with lingering smoke and light toffee.
