The American Oak (Quercus Alba) Oloroso Sherry Casks are crafted in Spain over six years. The oak is shipped to Spain from the USA, and goes through the same painstaking preparation as Tamdhu's European Oak (Quercus Robur). Nothing is left to chance, from the air drying of the staves in the Spanish sun, to the manufacturing and toasting of the cask by experienced coopers, and finally, the Oloroso Sherry seasoning of the new cask in the Bodegas of Jerez.
Tamdhu matured in American Oak has a wonderfully distinctive profile - noticeably different from their European Oak maturations. Quercus Alba Distinction has a tight grain, ideal for crafting quality casks. The toasted oak undergoes modification and seasoning by the Oloroso Sherry before embarking on its long journey to Tamdhu, where it receives the new-make spirit filling. Over time, the combination of cask and spirit imparts vanilla and rick fruit flavours, along with a wonderfully natural amber colour.
Official Tasting Notes
Nose - Shortbread dipped in vanilla cream, then oak, citrus and peppermint.
Palate - Rich, soft oak coats the mouth - giving way to plums and chocolate limes.
Finish - Unshakeable sherried oak finally fades to dried cherries and honeycomb.
