Named after its maturation warehouse, Pike Creek comprises two traditional components of Canadian whisky. The first spirit is double column distilled from corn, creating a buttery mouth-feel. The second is once column distilled from rye, producing spicy and nutty notes.
During maturation, casks are subject to the extreme temperature swings of southern Canada. This forces the spirit in and out of the wooden staves, giving this whisky its rich, complex flavour.
This results in a soft and smooth whisky with rich, complex flavours. It shows notes of dried orange peel, green apple, brown sugar and Christmas cake.
