FEW Spirits is a craft distillery based in Evanston, Illinois, just north of Chicago. The company was founded in 2011 by Paul Hletko, a former attorney who decided to pursue his passion for distilling.
Also known as the Columbian Exposition, the 1893 World’s Fair occurred in Chicago, Illinois, marking the dawn of modernism. It introduced innovations such as phosphorescent lights, moving walkways, an electricity-powered water fountain, and the Ferris wheel. Notably, it was the birthplace of a famous brand of juicy chewing gum and an award-winning beer, both still thriving today. However, it also epitomised the golden age of pre-Prohibition whiskey.
Decades later, Evanston, a suburb just north of Chicago, became synonymous with Prohibition and the headquarters of the temperance movement, led by a prominent female figure who also championed women’s suffrage. Although Prohibition ended in 1933, Evanston remained dry, holding onto the ideals of the noble experiment long after repeal.
These pivotal moments inspired FEW Spirits, bridging the gap between these iconic events and locations.
The distillery takes its name from Frances Elizabeth Willard, a prominent figure in Evanston's history and a leader in the temperance movement. The name "FEW" also reflects the distillery's focus on producing a select range of high-quality spirits.
FEW brings up an eye-opening new experience. Cask Strength FEW Spirits Bourbon, brought to bottling strength using cold brew coffee. Cold Cut drinks like a whiskey despited being at a unique angle. Whiskey flavours dominate, but smooth cold brew delivers unexpected depth and boldness.
Cinnamon and clove with dark rich roasted notes. Smooth body and hints of coffee that build sip by sip. They never overpower the unique, bold take on bourbon. Finish offers a soft and approachable profile that lingers on the palate.

Tasting Rating Guide
1: Light, good for beginners - an aperitif on a summers day, i.e. Glengoyne, Auchentoshan
2: Also good for beginners but with more depth and body - a little stronger than 1, ie. Glenmorangie, Speyburn
3: A dram for everyone, a little more complex so the palate requires a little more experience, i.e. Cragganmore, Macallan
