With the help of renowned whisky expert Dr Jim Swan, David and Tom debuted Yorkshire's first ever single malt whisky - Filey Bay. Inspired by the bay that is in sight of the distillery, Filey Bay is an exciting addition to
English whisky. A true field to glass distillery, they use barley grown at their farm and distills their spirit on both copper pot and column stills.
The second of Spirit of Yorkshire's Filey Bay Porter Cask brings together their farming, brewing and distilling expertise.
This whisky first matured for 4 years in first-fill ex-Bourbon casks, before being transferred to ex-Porter casks for almost 3 years. These casks were also originally ex-Bourbon, used to mature Filey Bay Flagship. They then held Wold Top Brewery’s Marmalade Porter, creating the barrel-aged beer 'Rip Curl'. Finally, they were used to create this single malt. Bolder, maltier, and carrying a deeper marmalade punch, it’s a complex, full-bodied dram.
