Glendalough Double Barrel Irish Whiskey begins its maturation process in flame charred ex Bourbon American oak. It undergoes finishing in Oloroso casks. These come from Montilla, a small town nestled in the rolling hills of the Spanish countryside.
They chose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land, encapsulated in the liquid when they put the whiskey in these slow toasted casks for ageing. These specially selected casks combined with expert liquid finishing to deliver a rich and complex flavour to this Double Barrel Irish Whiskey.
A grain whiskey bottling made on a Coffey Still, Glendalough Double Barrel uses corn and malted barley. The whiskey does not originate at Glendalough as the spirit has to be 3 years old before you can call it whiskey. The spirit first matures in ex-Bourbon American Oak casks before aging further in ex-Oloroso Sherry casks.
Official Tasting Notes
Nose - Rich with dark fruit, cherry, raisin, fig and Christmas pudding. Floral notes with lemongrass, citrus and a touch of nutmeg.
Taste - Sweet and smooth, with butterscotch, honey and peppercorn, dried fruit, maraschino cherries and brown sugar.
Finish - Ginger spices a touch of almond and earthiness.
