Suntory established the Hakushu Distillery in 1973, intending it to complement its existing Yamazaki Distillery. Nestled amidst the unspoiled forests of the Japanese Southern Alps in Yamanashi Prefecture, the distillery was strategically located to harness the region's pristine air, pure water, and natural ambiance. These elements play a pivotal role in shaping the distinct flavour profile of Hakushu whisky.
Hakushu whisky is known for its fresh, green, and herbal characteristics. It is often described as having a light and crisp flavor profile, with hints of fruitiness, floral notes, and a subtle smokiness. Crafted from a blend of malted barley and water drawn from the nearby Ojira River, this whisky embodies a harmonious marriage of natural elements.
The distillery uses traditional Scottish whisky-making techniques but adds a Japanese twist to the process. The distillery utilises copper pot stills for distillation and ages the whisky in a variety of casks, including American oak, sherry oak, and Japanese mizunara oak barrels.
From Suntory’s mountain forest distillery, nestled deep in Mt. Kaikomagatake. Hakushu is the gently smoky single malt whisky with herbal notes that is the revelation of Japanese single malts.
