Holyrood Distillery, located in Edinburgh, was first opened in 2019. The Holyrood Noir Triologie is a range of three single malts, created by combining different strains French wine yeast with Scottish malt, and maturing the spirit in wine casks.
This spirit for this bottling has been made using East Lothian Pot Still Malt and Pinnacle M and BP725 Yeast. The whisky was then matured in ex-Bourbon and Bordeaux Barriques. Berry nice notes of cherries, strawberries and blackcurrants, with just a hint of Scottish tablet.
Official Tasting Notes
Nose - Strawberries, blackcurrant, cherries, fruit slice and cheesecake.
Palate - Scottish tablet, fudge, doughnuts and breakfast cereal.
Finish - Silky, warm, lingering and dry.

Tasting Rating Guide
1: Light, good for beginners - an aperitif on a summers day, i.e. Glengoyne, Auchentoshan
2: Also good for beginners but with more depth and body - a little stronger than 1, ie. Glenmorangie, Speyburn
3: A dram for everyone, a little more complex so the palate requires a little more experience, i.e. Cragganmore, Macallan
4: A stronger spirit, a big whisky with lots of character and body, excellent after dinner, i.e. Lagavulin, Laphroaig
