Holyrood Distillery, located in Edinburgh, was first opened in 2019. The Holyrood Noir Triologie is a range of three single malts, created by combining different strains French wine yeast with Scottish malt, and maturing the spirit in wine casks.
This spirit for this bottling has been made using East Lothian Pot Still Malt and Pinnacle M and Maurivin Yeast. The whisky was then matured in ex-Bourbon and Burgundy Barriques. The perfect sweet and savoury mix. Think of digestive biscuits covered in raspberry jam, followed by pomegranate-filled brandy snap baskets.

Nose - Pomegranate, candy floss and blackcurrants.
Palate - Raspberry jam on toast, brandy snap basket, Cranachan, vanilla and malted biscuits.
Finish - Lingering, starts sweet and ends malty.

Tasting Rating Guide
1: Light, good for beginners - an aperitif on a summers day, i.e. Glengoyne, Auchentoshan
2: Also good for beginners but with more depth and body - a little stronger than 1, ie. Glenmorangie, Speyburn
3: A dram for everyone, a little more complex so the palate requires a little more experience, i.e. Cragganmore, Macallan
4: A stronger spirit, a big whisky with lots of character and body, excellent after dinner, i.e. Lagavulin, Laphroaig
