They operate as a farm distillery, meaning that they grow a portion of their barley on-site, making them one of the few distilleries in Scotland to do so. This allows them to have greater control over the entire whisky-making process, from barley cultivation to bottling.
Known for their peated whiskies, the distillery crafts their whisky using locally sourced barley and traditional floor malting techniques. Their whiskies often give a bold, smoky character, like most Islay drams, along with layers of complexity and depth.
The Wills' select the Kilchoman Family Collection casks during their annual review of maturing stock. The five members of Kilchoman's founding family individually select each release, bringing together distinctive choices that reflect their personal tastes, shared passion, and the developing character of Kilchoman.
The first edition of this collection features four expressions, showcasing the evolving influence of ex-bourbon and ex-sherry casks as Kilchoman reaches more significant age statements.
This bottling has been produced using barley peated to 20ppm, grown and malted onsite at Kilchoman's home on Rockside Farm. Matured for 14 years in ex-Bourbon casks.
