They operate as a farm distillery, meaning that they grow a portion of their barley on-site, making them one of the few distilleries in Scotland to do so. This allows them to have greater control over the entire whisky-making process, from barley cultivation to bottling.
Known for their peated whiskies, the distillery crafts their whisky using locally sourced barley and traditional floor malting techniques. Their whiskies often give a bold, smoky character, like most Islay drams, along with layers of complexity and depth.
Heavily peated and bottled at cask strength, this edition of Kilchoman's Machir Bay is vibrant, fearless, and full of character. From powerful smoke and bright citrus to warm spices and fresh vanilla, it's regular Machir Bay but turned up to full throttle.

Nose - Lemon peel, melon, floral notes and light peat smoke combine with sweet vanilla, honey.
Palate - Rich chocolate, fresh citrus and hints of smoked meat with lingering caramel sweetness.
Finish - Long and evolving with waves of integrated peat smoke, hints of spice and charred candied fruits.

Tasting Rating Guide
1: Light, good for beginners - an aperitif on a summers day, i.e. Glengoyne, Auchentoshan
2: Also good for beginners but with more depth and body - a little stronger than 1, ie. Glenmorangie, Speyburn
3: A dram for everyone, a little more complex so the palate requires a little more experience, i.e. Cragganmore, Macallan
4: A stronger spirit, a big whisky with lots of character and body, excellent after dinner, i.e. Lagavulin, Laphroaig
