Kilchoman Distillery is located on the Isle of
Islay, off the west coast of Scotland. Established in 2005 by Anthony Wills, Kilchoman is one of the smallest distilleries on the island. They operate as a farm distillery, meaning that they grow a portion of their barley on-site, making them one of the few distilleries in Scotland to do so. This allows them to have greater control over the entire whisky-making process, from barley cultivation to bottling.
Known for their peated whiskies, the distillery crafts their whisky using locally sourced barley and traditional floor malting techniques. Their whiskies often give a bold, smoky character, like most Islay drams, along with layers of complexity and depth.
This Maury Cask Matured release is a limited edition bottling, which has spent its entire maturation in ex-Maury fortified wine casks - a sweet Grenache noir-based wine from southern France's Roussillion region. The result is rich layers of dates, raisins and dark honey, balancing beautifully with Kilchoman's natural peat smoke and citrus sweetness.
Official Tasting Notes
Nose - Figs, raisins and dates with salted caramel, orange peel and soft peat smoke.
Palate - Pipe smoke and dark chocolate with layers of treacle and warming spices.
Finish - Dried fruits, cacao, earthy peat smoke and a gentle dry spice.
