White Peak Distillery was founded in 2016 and is located in Ambergate, Derbyshire. The brainchild of Max and Claire Vaughan, it is Derbyshire’s first full-scale craft distillery, with a proud focus on the unique Derbyshire provenance and heritage. The building itself was an old wire works and is now part of a UNESCO world heritage site. They released their first single malt whisky in 2022. In addition to this, they produce Shining Cliff gin, a cask-aged rum, and the 1876 Single Malt Cocktail, all of which they mature, bottle, and label on site. As our closest distillery, we are proud to have been a supporter of White Peak since they were first established.
Wire Works Heritage Chevallier is the very first non-peated single malt from White Peak! Chevallier is a heritage barley variety that was dominant in England from the 1820's - 1920's. The team at the distillery want to explore the usage of this barley during their early years of distilling, with its robust maltiness and rich marmalade character.
They've matured the new make spirit for several years in ex-Bourbon barrels, and can now offer one of the first, contemporary era whiskies made from Chevallier malt. A limited release of 999 bottles.
Official Tasting Notes
Rich and sweet, herbaceous, biscuity, grassy and spicy, with an indulgent creamy texture.
Nose - Baked vanilla cheesecake, rhubarb and custard, fruit salad sweets, strawberry laces, wood glue, watermelon, apple pie.
Palate - White chocolate, cassia, celery, vanilla extract, kashmiri chilli, tamarind, rose, malted milk biscuits, hay, oolong tea.
Finish - Delicate liquorice, baking spices, fresh cut grass, icing sugar.
Limited to 2 bottles per customer.

Tasting Rating Guide
1: Light, good for beginners - an aperitif on a summers day, i.e. Glengoyne, Auchentoshan
2: Also good for beginners but with more depth and body - a little stronger than 1, ie. Glenmorangie, Speyburn
3: A dram for everyone, a little more complex so the palate requires a little more experience, i.e. Cragganmore, Macallan
4: A stronger spirit, a big whisky with lots of character and body, excellent after dinner, i.e. Lagavulin, Laphroaig
