Cotswolds Distillery was founded in 2014, by Daniel Szor. It is situated in Stourton in Warwickshire, located in the Costwolds. After living and working in London for several years, Daniel moved to the picturesque countryside of the Cotswolds. He decided to combine his love of whisky and desire to start a new business to create Cotswolds Distillery.
Daniel, a native New Yorker, enlisted the help of Harry Cockburn and the late Dr Jim Swan to assist with the setting up of the distillery. Production of whisky began in September 2014. The first release of Cotswolds whisky came in October 2017, once the spirit had reached the three year mark. They make a gentle, light spirit with plenty of flavour, which has consequently won numerous awards.
The first whisky ever made in the Cotswolds. The distillers craft the Signature using the finest locally grown, traditionally floor-malted Cotswold barley. Apart of the Classics Collection, this single malt favours the rich and bold, fruity notes which result from maturation in the highly active STR (Shaved, Toasted and Re-charred) ex-red wine barriques. Blended with whisky matured in premium first-fill ex-Bourbon barrels, this single malt has notes of honey, red fruits and a hint of treacle.
